The Fond du Lac Alcohol Licensing committee is recommending approval of liquor licenses for two new Fond du lac restaurants and one existing restaurant. At their meeting Monday afternoon the committee reviewed license applications for the new owner of Backyard Bar and Grill, Paddy’s Pizza and The Sweet and Salty Pig. The owner of Ala Roma’s and Schmitty’s Oar House has purchased Backyard from longtime owner Mark Trepanier. Paddy’s Pizza will be opening a new restaurant at the former Pizzaville on West Scott Street and the Sweet and Salty Pig is going in at the former Cool River Bar and Grill on Pioneer Road. Owner Allison Gossman, a former cook at Backyard, says the restaurant will serve brunch, lunch and dinner…with a focus on southern comfort food. “Our brisket grilled cheese is amazing. We have slow roasted beef brisket with smoked Gouda and a bourbon-bacon jam, and mac and cheese with pork belly.”
